脆皮披萨 (Crispy Pizza)

I know that Zoe from bake for happy kids , Lena from frozen wings and
Joyce fromKitchen Flavours are bake along for "Pizza Nite-In" theme this week.
So i also hope to join in with their bake along project.
However i  just do not know how to link to them only...hee...hee!
Kindly hop over their blogs to see their own creation too.

Here is my very simple "Crispy Pizza Recipe".
I wish you all may like it.

Original recipe adapted from an old magazine.
My own version of crispy pizza recipe in blue ink.

Ingredients(A)

15 slices cream cracker
mozzarella cheese



Ingredients(B) (i omitted all these and replaced by tomato sauce for base)

pizza sauce
oregano
rosemary to taste
1/2tsp black pepper



Ingredients(C)

400gm shredded chicken meat (cooked)
1nos green pepper }i omitted these and replaced by
1nos red pepper    }canned pineapple
some olive (slices) }



Ingredients(D)

3tbsp mayoonaise
1tbsp chilli sauce

Method:
1.Spread ingredients (B) onto cream cracker, then place ingredients(C)
on it.
2.Spread cheese shredded on top.
3.Bake in preheated oven at 180C for 15-20 minutes.
4.Lastly pipe ingredients(D)onto it and served hot.

I think this could be ideal for served as breakfast or snack for tea time.

桂花伊面 (Stir-Fry Yee Mee In "Gui Hua" Style)

原食譜的名称是"桂花面线",
顾名思义是用"面线"来炒的,
而我用"伊面"来代替了。




Recipe adapted from “Famous Cuisine Issue 69”
original ingredients in black words and my modification in blue ink.




Ingredients (A):

5 nos fine "Mee Suan" (i used Yee Mee)
2 nos egg (beaten)
60g flowering chives (sectioned) (i used spring onion)
100g mung bean sprouts (i used cabbage)
1 1/2tsp chopped garlic

Ingredients (B):

80g shelled prawns
80g "Cha Xiu" (shredded) (i replaced by chicken breast meat)
80g big onion (shredded)
1 red chilli (chredded) (i replaced by 云耳,the black soft fungus)
30g shredded carrot
30g shredded mushroom (i replaced by button mushroom)

Seasoning:

1/2tbsp oyster sauce
1/2tbsp light soy sauce
1tsp chicken stock powder (i omitted this)
1/2 tsp pepper

Method:
1.Blanch "Yee Mee" in the boiling water, dish up, drain well and ready to cook.
If you are using "Mee Suan" have to deep-fry it first.
2.Heat up 2tbsp oil in the preheated wok to saute garlic over a low heat until fragrant.
Put in all the ingredients(B),stir-fry briskly over high heat until aromatic.
3.Add in beaten egg, stirring constatly over high heat.
4.Place in "Yee Mee" and seasoning, stirring over high heat until well combined.
If you are using flowering chives and mung bean sprouts put in in this stage. 
Now ready to be served hot.

摩立黄金海岸度假村(Gold Coast Morib Resort)

上个月的29日8月2011年,
我们一家大小去了摩立黄金海岸度假村里住了一个晚上。


我们住的是studio suite room ,房间相当的阔。



浴室也很大间哟!还有private jaguzzi呢!



当天的天气非常好,不会晒晒。
换好了泳衣准备下泳池咯!







好大的water theme park。


到了傍晚,我们去找吃的时候,去了这个有名的“情人桥”走一趟。
我们就在这情人桥旁边的一间餐厅吃晚餐。


吃了breakfast buffet后便到这度假村后面走走。


有些水上亭子还没做好。




有人在此放风筝。


有人在这里玩吹泡泡。




回去房间收拾行李。 再见摩立黄金海岸度假村,下次见!

本来想顺便去买些Tanjung Sepat出名的“酶菜猪肉包”的,
但是看一看如此那么多人排队的情况还是下次吧。

So tonight, only have these for celebrate my Mid-Autumn Festival this year!

传统月饼 (Traditional Mooncake)

(1st attempt)  第一缺点是:  做出来的月饼太矮了。


(1st attempt) 第二缺点是: 颜色不够深。


(1st attempt): 剩余的饼团拿来弄了两个小猪仔饼。

 (2nd attempt)终于比较像月饼。


(2nd attemp)颜色也算ok了吧。


(2nd attempt) 我共做了4个蛋黄红莲蓉;2个蛋黄黑芝麻馅
和2个蛋黄pandan lotus paste。

切开看一看里面,还可以吧。

 (3rd attempt)做了11个mini size 的月饼。

里面包的是黑芝麻馅和瓜子肉。

Ingredients for 8 normal size of mooncake:
Cake Flour/All Purpose Flour 300gm
Cocoa Powder 1tbsp
Baking Soda 1/4tsp
Golden syrup 195gm
Peanut Oil 75gm
Alkaline water/Lye Water 1tsp
some melon seeds wrap into the fillings
8 salted egg yolks

**Pour some 绍兴酒/白米酒onto the salted egg yolks, let them there for 15 minutes.
place salted egg yolks on a baking tray and place the tray in the middle of the oven,
bake them for 12mins at 160degree C**

Fillings:
White Lotus Paste/Pandan Lotus Paste/Black Sesame Paste (as desired)
(divided into 8 pcs of 105gm each wraped in melon seeds and salted egg yolks, rolled into a round shape)

Ingredients for 11 mini size of mooncake:
Cake Flour/All Purpose Flour 180gm
Cinnamon Powder 1tsp
1/4tsp baking soda
Golden Syrup 100gm
Peanut Oil 50gm
Alkaline Water/Lye Water 1tsp
some melon seeds

Fillings:
Black Sesame Paste (as desired)
(divided into 11pcs of 50gm each wraped in melon seeds,rolled into a round shape)

Method :
-mix well golden syrup,peanut oil and alkaline water in a bowl.
-sieve flour  with cocoa powder/cinnamon powder and baking soda.
-add the sifted flour into the syrup mixture.
-use spatula to mix the mixture into a soft dough.
-do not over knead the dough,or else the mooncake will be turn out so hard.
-leave the dough for 5 hours covered with damp cloth/plastic bag.
-divide dough into 55gm each for normal size mould (30gm for mini size mould) .
-flatten the dough using palm/rolling pin.
-Wrap in the fillings and rub it into oval shape and press into floured mould.
-dislodge imprinted mooncake and place on greased baking pan.
-preheat oven to 200C, place the tray at the middle level of the oven,
-then lower the heat to 180C and bake the mooncakes for 10mins.
-egg wash the mooncakes and bake again at 170C for 10mins (place at lower level) .
-egg wash again and bake for another 7mins until golden brown colour.

**egg wash-1egg yolk +1tbsp water mix well**

**刚刚出炉的月饼不要切来吃,因为皮会比较硬,
要等2/3天让它们回油后才可以吃**
