猪肠粉煎韭菜肉碎蛋(Chee Cheong Foon with Minced Pork Fried Egg)

有一次在"香港旺角餐厅"叫了一碟"猪肠粉煎韭菜肉碎蛋"来吃,
觉得除了"酿豆腐猪肠粉",这样的做法也挺好吃,
于是心里便想下次也在家里造样子做来吃吃看。

今早到巴刹里买了4条圆形猪肠粉准备大展廚艺。
我这是2人吃的份量:4条圆形猪肠粉,4粒鸡蛋,一些肉碎,少许芫茜和韭菜。
把猪肠粉给切成大该一寸的长度,韭菜也是切小段。
首先将肉碎加点幼盐,生抽和胡椒粉,放入平底镬给炒熟备用。
然后把鸡蛋打散在大碗内,加入熟了的肉碎,韭菜和芫茜。再放点幼盐跟胡椒粉调味。
接着在平底镬里排好猪肠粉,沾入少许油跟着慢慢地倒入鸡蛋液,用小火煎熟。

之后上碟,挤上少许辣椒酱,便可以上桌了。
