蜂巢面包 (Mock Bees Sting Bread)

那天用来做buns的"汤种"还有剩下另一份(120g)在冰箱里。
为了怕它变坏,隔天赶紧又用它来做了这个“蜂巢面包”。
果然做出来的质地也是柔软的。

我放太多葡萄干了。上层洒的幼糖(白白色的)很不均匀一堆堆地,
难看死了。下次用sieve来洒幼糖应该会比较均匀一点吧。

做这种面包需要用到:
A.2杯高筋麵粉,1/2tsp幼盐,1tbsp奶粉,1/3杯糖粉,1 1/2tsp instant yeast
B.1粒鸡蛋和120g汤种
C.40g牛油
D.少许黑葡萄干和幼糖


做法:
1.将所有(A)料拌均匀,然后加入鸡蛋跟汤种搓成粗团,如果太干加点水,
   可是我的太湿润了,所以并没加水。加入(C)搓成光滑和有弹性的面团。
2.接着将面团放进大碗里用保鲜纸或湿布盖着,让它发酵至双倍大。
3.将面团分为2份,把它们搓圆和扞扁,排在搽油的烘盘,盖好再发酵45分钟或
  双倍大后,涂上蛋液及把葡萄干按压在面团上,洒上少许幼糖。
4.放入预热烘炉一180C烘20分钟至金黄色便可。

以上的材料(除了汤种)和做法都是照着以下这本书而做的。



                                          但是我用的是这些量杯,因为对我来说是比较
                                          方便和快得多。


书里记载的是用秤的,所以应该是高筋面粉250g,糖粉40g和水90ml。

I've not make this for a long time. Whenever I make this, I like to sprinkle some grated cheese on top.
