合桃葡萄干面包 (Walnut Raisin Bread Loaf)

我自小都没吃过合桃面包,所以并不晓得味道如何。
刚好冰箱里有剩下许多合桃,
是上次做chocolate brownies时所剩余的,
于是便用来做这个“合桃葡萄干面包”咯。

将高筋面粉330g,盐1/2tsp,糖粉50g和instant yeast 1 1/2tsp混合。
加入 "汤种”130g和蛋黄1粒以及鲜奶150ml搅拌成团。
再加牛油45g搓成光滑和有弹性,最后加入合桃80g(切碎烤香)和葡萄干80g。
放入大碗盖好待发酵至双倍大,分为3份搓圆,静置10分钟。
然后杆扁(step A)。

俩旁对折(step B)。
反转另外一面,杆长和扁 (step C)。


再转回另一面,将面团卷成瑞士形状 (step D)。
其余2份也如同以上做法完成。



放进pullman tin 或loaf pan里,盖好发酵至8分满,
便可以送入预热烤箱以180C烘20-25分钟了。


香喷喷的合桃葡萄干面包出炉啦!


没有一把好的刀子,
所以切到这个样子囖。
管它!又不是拿去卖的,不要紧呀。

oh, it's walnut raisin bread!! this is my favourite.. i sometimes cannot resist to buy the big loaf from Jusco at RM3.95 whenever i walked passed, haha!!

The walnut and raisin are so match.I like this kind of bread no need to spread with jam.
